If you are able to remember WAY back to the last week of APRIL, that is where the craziness and travel began for me. EASTER SUNDAY!!!
Our family [minus 2 oldest COLLEGE sons] headed NORTH on the PA turnpike 2 1/2 hrs. to my little sisters house to celebrate the day with her family and my Mom. It was April 24th [one of the latest Easter's ever]! In the Northeast, SPRING was having a rough start. At our home, we were having a nice "cool" spring day, the forsythia's were actually starting to turn GREEN and the cherry trees were blossoming. It was hard to believe just 110 miles North, there was still SNOW SHOWERS in the forecast!!!!

WHAT is THIS!!! EASTER PIE...an Italian traditional staple of EASTER. inside a "bread" type pie crust is ricotta cheese, mozzarella, sausage and hard cooked eggs.....YUMMM, YuMMM, YUMMM!!!! |
